The unusually thick stainless-and-aluminum plate is the engineering case: more stable heat across a broad surface, with enough restraint in the design that the appliance can stay at the center of dinner. It is not trying to replace a range; it is trying to make cooking part of the meal.
For tabletop cooking as theater
For steak, okonomiyaki, vegetables and pancakes, the table becomes the kitchen without dragging restaurant equipment into the room.
The catch
At $449 it is expensive for a single-purpose electric griddle, and the appeal depends on actually using the tabletop format rather than storing it after the novelty fades.
